- 1 1/2 cups plain flour
- 1 tsp baking powder
- 1 tsp ground cinnamon powder
- 1 cup rolled oats [I replace them with cornflakes]
- 1/2 cup light muscovado sugar [ I replace with brown sugar ]
- 1/2 cup chopped ready-to-eat dried apricots
- 1 tbsp flaked hazelnuts or almonds [ I skipped this, no stock available in the house]
- 2/3 cup natural yogurt [ I think it would be yummy if we put yogurt with peach flavour.. what do you think? next time i'll try...]
- 3 tbsp sunflower oil [ no sunflower oil, I put corn oil]
Method:
- Preheat the oven to 190C. Lightly oil a large baking sheet.
- Sift together the flour, baking power and cinnamon. Stir in the oats, sugar, apricots and nuts.
- Beat together the yogurt and oil, then stir evenly into the mixture to make a firm dough. If necessary, add a little more yogurt.
- Use your hands to roll the mixture into about 16small balls, place on the baking sheet and flatten with a fork.
- Sprinkle with demerara sugar. Bake for 15-20 minutes, or until firm and golden brown. Transfer to wire rack to cool. Store in an airtight container.
